Directions:

Pre-heat your oven to a temperature of 400 degrees Fahrenheit

Take a baking sheet and line it up with parchment paper

Slice up the eggplant into half-lengthwise and cut the halves into quarters

Cut up the halves into moons and add the prepared eggplants to your baking sheet

Make sure to keep the skin side facing down

Brush the eggplants with olive oil

Season with some pepper and salt

Roast the eggplants in the oven for 30 minutes until they are lightly browned

Remove and season with a bit of lemon juice

Serve and enjoy!
